Protein Banana Chocolate Chip Muffins šŸŒ

If you've followed me or been on my team for an extended period of time, you know I LOVE bananas. Like, I'm pretty sure I could eat an entire loaf of banana bread on my own...anyone else?!šŸ˜¬


If you scroll a little ways back here on my blog, you will find my high protein banana bread recipe, but a little variety never hurt nobody...



And these muffins are SO easy to prep for the week for an easy, on-the-go breakfast or snack optionšŸ™ŒšŸ¼


Here's what you will need:

  • 3 small-medium sized bananas

  • 1 scoop chocolate banana protein powder

  • 1 scoop cinnamon cookie batter protein powder

  • 1 cup liquid egg whites

  • 4 tbsp mini chocolate chips (I use the Enjoy Life brand)

  • 1 tsp cinnamon

  • 1 cup kodiak cakes buttermilk mix

  • 1 tsp baking powder

  • 1 tsp baking soda

  • Pinch of salt

  • 1 tsp all-spice (optional)

  • 1 tsp banana extract (optional)


Here's what you will do:

- Preheat oven to 350F.

- In a blender, combine the bananas, egg whites and spices together and mix well.

- Add in the protein powder, pancake mix and baking powder and baking soda. Blend until all ingredients are mixed.

- Pour batter into baking cups or muffin tin sprayed with non-stick spray and bake for 30 minutes or until a toothpick inserted into the center of the muffins comes out clean.



Nutrition info: makes 10 muffins: 140 calories, 11g protein, 3g fat, 17.5g carbs per muffin!
